Before becoming the powerful and delicious vinegar Artizn uses in its tonic, it begins its life as a rice wine, which is brewed on the plantation only once a year. The rest of the time is spent cultivating and sourcing the highest quality raw ingredients. Once the rice wine has been brewed, batches are infused with a unique blend of over 20 traditional medicinal herbs, roots, and fruit––and the fermentation process that creates vinegar begins. This fermentation occurs in an onggi, a traditional ceramic pot, where a batch is left to age for three years under continuous care: the onggi is swathed in blankets and exposed to peaceful music to assure its wellbeing. Throughout each step of the process, batches are held to the highest standards in quality, delivering a naturally fermented vinegar bursting with integrity, health benefits, and flavor.
